And I said, you know what – if there is movies speaking Spanish, we should have something from Spain. So we have this beautiful Cinco Jotas ham here. And we slice it really thin, serve it with a little burrata, maybe a little roasted fruits. So that's going to be amazing. And here are the Miyazaki beef, we serve it with a ginger carrot purée. And it's actually my son Byron is making it up."

"Eric is making a vegan pasta here, because some people are vegetarian and vegans and so forth. So he has a pasta machine where it extrudes fresh pasta made to order, boils it, then make a sauce with caper berries, with tomato water and roasted tomatoes, arugula, a little spinach, garlic chili flakes. And it really tastes amazing – really rich. Lots of olive oil in there, too. So we have a little bit of everything. Then we have traditional dishes like our chicken pot pie with black truffles. We brought in 30 pounds of black truffles from Spain. We have 40 pounds of Kaluga caviar for our baked potatoes with caviar. And one of the favorite things always is the macaroni and cheese. People are going to think, at the Oscars – macaroni and cheese? But people love simple comfort food too."

"So for the Oscars, what we are doing this year is we're celebrating with Tequila Don Julio, which gives us the ability to do anything from sort of a lighter, crisper style with the blanco all the way down to 1942, which is more full-bodied and has a lot of richness. So the cocktails are meant to have a little bit of something for everybody in a perfect world. We are even doing a non-alcoholic version of one of the featured cocktails, so that everybody gets a chance to enjoy."

"I guess probably the most fun one is would be a drink we are doing called the El Dorado, which is Tequila Don Julio 1942, which is their very, very aged, beautiful style of tequila. But we're doing it in a really fun way – doing it as a foam drink that we are serving in little gold eggs. And it's the Tequila 1942, it's a little bit of coconut cream, cold brew coffee, caramelized pineapple, some anise and orange essence, a little bit of salt, a little bit of cocao nibs. Again, it's super celebratory. I mean, it's the Oscars, so you've got to have some fun with it all."

The 1,500 guests that pour into the Governors Ball after the Academy Awards this year will be greeted by theatre-inspired styling and an international flair.
"We have a very diverse menu from all over, because the movie business is from all over the world, too. So, why not make the menu, too?" said famed chef Wolfgang Puck, who oversees the menu at the event. "So we have this amazing Miyazaki beef from southern Japan. They really choose it – really, only the best pieces for us here. And then for the first time this year, I got inspired by the movie 'Roma,' where they speak Spanish. Puck showed off a menu designed for Hollywood's elite -- with food ranging from vegan to savory ham -- at a media event in Los Angeles on Friday (15 FEBRUARY).
"Eric is making a vegan pasta here, because some people are vegetarian and vegans and so forth. ... Then we have traditional dishes like our chicken pot pie with black truffles. Oscar winners can celebrate -- and losers can drown their sorrows -- with an array of signature cocktails featuring tequila.
The most striking is the El Dorado, according to Liquid Productions owner Andy Seymour, who helped design the drinks for the event on February 24.
"We're doing it in a really fun way – doing it as a foam drink that we are serving in little gold eggs. And it's the Tequila 1942, it's a little bit of coconut cream, cold brew coffee, caramelized pineapple, some anise and orange essence, a little bit of salt, a little bit of cocao nibs. Again, it's super celebratory. I mean, it's the Oscars, so you've got to have some fun with it all," Seymour said.
Lois Burwell is a veteran Hollywood makeup artist and the awards and events committee chair for the U.S. film academy's board of governors. She says the overall styling of the Governors Ball is inspired by movie theatres.
"The desire is that we are returning to the heart of who we are, which is the color tones and the color palette that we have chosen is that of cinema, of theaters. So when you walk in here, it's an elegant party version of a cinema, basically. Because that's the thing we all have in common and the passion that drives us," she said.
It's been a tumultuous last few months for the academy, with controversy over the ceremony's host -- and now lack thereof -- and over changes intended to streamline the telecast. Burwell might as well have been speaking of the entire Oscar season as she described the evolution of the ball's decor.
