Rava Modaks can be made instantly unlike steamed Modak. Preparing Modak using rice flour at times can really get into your nerves. The required consistency for the rice flour dough is a tricky business. If the rice flour is not fresh the dough may not get the correct texture and it will crack and break making the stuffing of Modaks difficult. These Modaks, when steamed, may turn chewy and dense. While with rava, roasted with ghee and followed by milk, add texture and fragrance to the dough and can be easily shaped into perfect Modaks. You can use the same coconut and jaggery mix for stuffing.
