Buying Guide: Know all about Ghee

Also known as clarified butter, desi ghee is almost an inevitable ingredient in Indian households. Ghee is brushed generously over rotis and parathas (Indian bread), poured on rice and pulao(Indian dish made out of rice), and even used in dal(lentils) and other vegetables. A jar of desi ghee is almost a must in the kitchen. But which is the best one? Which brand of desi ghee will give you more value? Consumer Voice evaluated the various brands of desi ghee on various parameters such as; milk fat, R M value, BR Reading, Moisture, Peroxide value, etc.

Consumer Voice, Delhi: The major constituent of Desi Ghee (Clarified Butter) is milk fat. As per mandatory Indian regulation, the milk fat in Desi Ghee shall not be less than 99.5 percent. Similarly, a major constituent of vegetable oils is also fat. One gram of milk fat/vegetable fat/animal fat gives 9 kilocalories to the human body. Milk fat/vegetable oil fat/animal fat is also called visible fat.

As per the Food Safety and Standards Authority of India (FSSAI), visible fat Recommended Dietary Allowance (RDA) for sedentary workmen is 25 grams per day and for sedentary workwomen is 20 grams per day.

Testing of Ghee

Consumer Voice conducted the test on various brands of ghee available in the Indian market. The prime objective behind carrying out the comparative study was to assess and evaluate the popular brands of desi ghee available in the market as per the relevant national standard.

All the tested brands were evaluated and graded as per their overall performance based on the comprehensive lab test reports. The brands were being tested on various quality, safety, and acceptability parameters.

The key parameters for which the ghee brands were tested included milk fat, R M value, BR Reading, Moisture, Peroxide value, Free fatty acid, vitamins A and saturated fat, PUFA, MUFA, cholesterol, and trans fat. Consumer Voice also carried out a series of tests to check for adulteration (with vanaspati, animal fats, etc.).
