She says that the sprouted form of moong dal doubles its nutritional content. Sprouted moong dal contains magnesium, copper, folate, riboflavin, vitamins, vitamin C, fiber, potassium, phosphorus, magnesium, iron, vitamin B6, niacin, thiamine, and protein. Since the level of glucose in sprouted moong dal is also very low, its intake greatly benefits diabetic patients also.
